Joey Sanders, Club General Manager

Joey is the Club General Manager at The Exchange. After traveling the world as a member of a military family growing up, Joey found a love for hospitality and honed his skills with a degree in Hospitality Management from James Madison University in Harrisonburg, Virginia. Following college, Joey took on the world of private restaurants, working in casual environments as well as high end fine dining, where he continued to fine tune his skills. He also earned his sommelier certification from the Court of Masters. Most recently, Joey worked for the Colorado Golf Club in Parker, CO where he utilized his talents to reinvent the food and beverage programs while growing and executing a lively event calendar that spurred an expanding sense of community.

When Joey’s not working, he enjoys spending time outdoors golfing, playing softball, or hiking with his pit/chocolate lab mix pal, Packer.

Kayla Forte, Executive Chef

Kayla, our Executive Chef at The Canyon House Kitchen + Cocktails,  is a proud Colorado native who grew up on her family’s dairy farm in Eastern Colorado. There, she discovered her love for raising cattle, milk production, and organic gardening. While she originally studied accounting in college, a part-time job at a local cupcakery introduced her to the world of culinary arts—and she was hooked. She soon transferred to the Art Institute of Colorado, where she studied culinary arts, baking and pastry, and restaurant management.

Kayla’s passion for bold flavors and creative cooking was inspired by her grandmother, who shared treasured family recipes from Sicily. She thrives in the organized chaos of the kitchen, channeling that energy into delicious, thoughtfully crafted meals for the community.

When she’s not in the kitchen at Canyon House Kitchen and Cocktails, you’ll likely find her paddle boarding, camping, hiking, or enjoying nature with her pit bull, Toby.

Fun fact: Kayla once created five custom birthday pupcakes for Oprah Winfrey’s beloved dogs!

Greg Goins, Assistant General Manager

Greg began his hospitality career as a bartender, quickly moving into management, and eventually restaurant ownership. In September of 2024, he decided to take on a new and exciting challenge, as Food & Beverage Director here at The Canyons, before becoming Assistant General Manager in 2026. The growth and resiliency Greg developed through his many years in hospitality fuel his passion for the industry, as he loves the fast-paced, people-centric world of serving patrons. In a management role, he takes pride in the satisfaction of the guests as well as his team members. Greg notes, “I’ve learned that hospitality is not just about food and drinks; it’s about people. It’s about creating a space where people feel valued, where they can relax, celebrate, or simply enjoy a moment of peace.”

Nancie Lewis, Food & Beverage Manager

Throughout her career, she has successfully led diverse, collaborative teams that consistently meet and exceed sales goals while fostering warm, welcoming environments for both guests and employees.

Marie Leiby, Food & Beverage Assistant Manager

Marie began her hospitality career at a small local diner, where she spent several years gaining experience in a variety of roles. During that time, she developed a strong appreciation for guest service and discovered a passion for growing within the hospitality industry.

Wanting to explore a new side of the industry, Marie joined The Exchange as a Barista with a desire to learn more about the craft of coffee, and quickly developed a deeper appreciation for the artistry and detail behind the process. In her current leadership role, she enjoys crafting seasonal specials, supporting team development, improving shop operations, and finding ways to elevate the guest experience. Known for her organization and reliability, Marie is always motivated by opportunities to learn, grow, and make the spaces around her better.

Outside of work, Marie enjoys baking, arts and crafts, thrifting, and outdoor adventures. Having spent much of her childhood growing up in Germany, she developed an early appreciation for exploring new places and experiencing different cultures, something that continues to shape her interests today.
