The Exchange Coffee House is the first community gathering place to come to life at The Canyons. It’s where you can enjoy a handcrafted latte and pastry in the morning. The Exchange is the perfect venue for your gathering. Natural light, floor-to-ceiling windows, wood floors, and an exposed ceiling all come together to create a warm, inviting atmosphere.

There are few things more rewarding than good friends gathered around great food. Whether it’s an office lunch or a family gathering, we will take care of you. All of our food is made from scratch and prepared fresh each and every day, so we request one week’s notice for all catering orders.

Joey Sanders, Club General Manager

Joey is the Club General Manager at The Exchange. After traveling the world as a member of a military family growing up, Joey found a love for hospitality and honed his skills with a degree in Hospitality Management from James Madison University in Harrisonburg, Virginia. Following college, Joey took on the world of private restaurants, working in casual environments as well as high end fine dining, where he continued to fine tune his skills. He also earned his sommelier certification from the Court of Masters. Most recently, Joey worked for the Colorado Golf Club in Parker, CO where he utilized his talents to reinvent the food and beverage programs while growing and executing a lively event calendar that spurred an expanding sense of community.

When Joey’s not working, he enjoys spending time outdoors golfing, playing softball, or hiking with his pit/chocolate lab mix pal, Packer.

Greg Kunter, Executive Chef

Chef Greg was born in Ohio, and his family moved here to Colorado when he was 2. While attending the University of Northern Colorado pursuing a degree in Elementary Education, he took a job as a cook at a local restaurant and realized it was what he wanted to do for a living. Following his newfound passion, Chef Greg transferred to the Art Institute of Colorado, for a degree in Food & Beverage Management. While in school, he was hired at Le Grande Bistro and Oyster Bar in Denver, steadily moving his way up the line. He then took the role of Sous Chef at Coohills Restaurant in Denver, followed by a position as a private chef for a local family in Cherry Hills, and also with a private caterer in Moab, Utah. Chef Greg had the opportunity to invent and prepare cuisine for many esteemed people and organizations, including famed Hollywood Director George Lucas, the British Broadcast Company, Avalanche hockey star Joe Sakic, and many other prominent people. We’re thrilled to have Chef Greg join the team at The Exchange, bringing his extensive culinary experience to our restaurant.

Abagael Francis, F&B Supervisor

Abagael spent her childhood in Europe before moving to Colorado with her family in 2008. She earned an associate’s degree in Evolutionary Anthropology from the University of Colorado Denver. After graduating, she joined the Exchange Coffee House, where her passion for hospitality was ignited.

In July 2022, Abagael embarked on her journey with The Canyons as a barista. She quickly became an integral part of the team, driven by a keen interest in wine. Her dedication earned her a Level 1 Sommelier Certification, and she has since been instrumental in hosting wine tasting events for the community. Abagael’s commitment to her craft and team earned her promotion to Food & Beverage Supervisor, all while she continues to work towards her Level 2 Sommelier Certification.

Outside of work, Abagael enjoys creating art, cooking, kayaking, and exploring new wines.

Abby Zimmerman, Lifestyle Manager

Abigail (Abby for short!) is our Lifestyle Manager at The Canyons. Her roles are to bring the community to life through events and new programming, assisting with communications, and more.

Abby is a Colorado native, born and raised in Parker, Colorado. After high school, she moved to Bozeman, Montana to pursue her college degree at Montana State University. She received her Bachelor of Science in Business Management with a minor in both Small Business Management & Entrepreneurship, as well as International Business. In Abby’s free time she loves to enjoy the traditional Colorado lifestyle including activities like camping, hiking, and golfing. She also spends a lot of time with her family – and she is a triplet!

Greg Goins, Food & Beverage Director

Greg began his hospitality career as a bartender, quickly moving into management, and eventually restaurant ownership. In September of 2024, he decided to take on a new and exciting challenge, as Food & Beverage Director here at The Canyons. The growth and resiliency Greg developed through his many years in hospitality fuel his passion for the industry, as he loves the fast-paced, people-centric world of serving patrons. In a management role, he takes pride in the satisfaction of the guests as well as his team members. Greg notes, “I’ve learned that hospitality is not just about food and drinks; it’s about people. It’s about creating a space where people feel valued, where they can relax, celebrate, or simply enjoy a moment of peace.”
